Ingredients

  • 1 lb fresh squid, cleaned and sliced into rings
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 1/4 cup water
  • 1 tbsp brown sugar
  • 1/2 head garlic, minced
  • 1/2 tsp ground black pepper
  • 2 bay leaves
  • 1 tbsp cooking oil
  • Green onions, chopped (for garnish)

Directions

Step 1

Heat a large pan over medium heat and add the cooking oil.

Step 2

Add the minced garlic and sauté for 1-2 minutes until fragrant.

Step 3

Add the sliced squid and sauté for another 1-2 minutes until the squid turns opaque.

Step 4

Pour in the soy sauce, white vinegar, and water. Add the brown sugar, ground black pepper, and bay leaves.

Step 5

Mix well and bring to a boil.

Step 6

Once boiling, lower the heat to medium-low and let the squid simmer for 30-40 minutes until it becomes tender and the sauce thickens.

Step 7

Stir occasionally to prevent the squid from sticking to the bottom of the pan.

Step 8

Once the squid is tender and the sauce has thickened, remove the pan from the heat.

Step 9

Transfer the Adobo Pusit to a serving dish and garnish with chopped green onions.

Step 10

Serve hot with steamed rice.
