Cornbread

Cornbread

Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup vegetable oil

Directions

Step 1

Preheat your oven to 400°F (200°C) and grease a 9-inch square baking pan with cooking spray.

Step 2

In a large mixing bowl, whisk together 1 cup of yellow cornmeal, 1 cup of all-purpose flour, 1/4 cup of granulated sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt.

Step 3

In a separate mixing bowl, whisk together 1 cup of milk, 2 large eggs, 1/4 cup of melted unsalted butter, and 1/4 cup of vegetable oil.

Step 4

Pour the wet ingredients into the dry ingredients and stir until just combined. Don't overmix the batter.

Step 5

Pour the batter into the prepared baking pan and smooth the top with a spatula.

Step 6

Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

Step 7

Let the cornbread cool in the pan for at least 5 minutes before slicing and serving.
