How to Make Adobo Sauce

Ingredients

  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 1 head garlic, peeled and minced
  • 1 tbsp whole black peppercorns
  • 2 bay leaves
  • 1 tbsp brown sugar
  • 1/4 cup water

Directions

Step 1

In a small saucepan, combine the soy sauce, white vinegar, minced garlic, black peppercorns, bay leaves, brown sugar, and water. Stir to combine.

Step 2

Bring the mixture to a boil over medium-high heat.

Step 3

Reduce the heat to low and let the sauce simmer for 10-15 minutes until it has thickened and reduced in volume.

Step 4

Remove the bay leaves and peppercorns from the sauce.

Step 5

Transfer the sauce to a blender or food processor and blend until smooth.

Step 6

If the sauce is too thick, you can add more water or vinegar to thin it out to your desired consistency.

Step 7

Store the adobo sauce in an airtight container in the refrigerator for up to 2 weeks.
