Ingredients
- 6 skin-on, bone-in chicken thighs
- 2 tablespoons extra-virgin olive oil
- Juice and zest of one lime
- 2 tablespoons iSpice World Flavors™ Jerk Seasoning
- 2 French shallots, finely chopped
- 1 cup fresh coriander, finely chopped
- Kosher salt, to taste (optional)
- 1 tablespoon vegetable oil
Directions
Step 1
Combine oil, lime, iSpice World Flavors™ Jerk Seasoning, coriander, shallot and chicken in a plastic bag. Massage the marinade into the chicken and refrigerate overnight.
Step 2
Heat an oven-proof skillet over medium-high heat with vegetable oil. Preheat oven to 375° F.
Step 3
Brown the chicken, skin-side first for 5 minutes per side until golden brown.
Step 4
ransfer to oven and roast for 15-20 minutes until chicken temperature is 165° F.
Step 5
Loosely tent chicken with aluminum and let rest for 5 minutes before serving.
