Penne with Chickpea Sauce
Ingredients

1 lb dried penne pasta, cooked to package instructions

3 tbsp extra virgin olive oil

1 small onion, small dice

2 small carrots, peeled & chopped

1 cup canned chickpeas, rinsed & drained

3 tbsp iSpice World FlavorsTM Mediterranean Seasoning

2 cups vegetable stock
-
1/4 cup fresh basil, roughly chopped

3 tbsp toasted pine nuts

freshly grated parmesan cheese
Directions
Step 1
Heat olive oil in a large pan over medium heat.
Step 2
Sweat onions and carrots until onions are translucent.
Step 3
Add iSpice World FlavorsTM Mediterranean Seasoning and chickpeas to pan. Cook 5 minutes, stirring often.
Step 4
Transfer mixture to a blender with vegetable stock. Puree until completely smooth.
Step 5
Toss with hot cooked penne, top with basil, pine nuts and parmesan to serve.
