Ropa Vieja Cuban Slow Cooker Beef

Ingredients

  • 2 tbsp olive oil
  • 2 lb. flank steak, trimmed
  • 1 cup beef stock
  • 1 (10 oz) can tomato puree
  • 1/2 cup red wine
  • 5 tbsp iSpice World FlavorsTM Latin Seasoning
  • 1 yellow onion, thinly sliced
  • 1 green bell pepper, seeded & sliced into strips
  • 1 red pepper, seeded & sliced into strips
  • 1 tbsp red wine vinegar
  • 1 bunch fresh cilantro, roughly chopped

Directions

Step 1

Heat 1 tbsp olive oil in a large skillet over high heat.

Step 2

Rub the beef with 2 tbsp of iSpice World FlavorsTM Latin Seasoning and sear 4 minutes per side.

Step 3

Combine beef stock, tomato puree, remaining olive oil, seasoning, red wine, onion, bell peppers and vinegar in a slow-cooker.

Step 4

Top with seared flank steak, cover and cook on low for 8-10 hours until beef is falling apart and is easily shredded.

Step 5

Shred beef into the sauce and serve with rice sprinkled with fresh cilantro.
