Spiced Cheesy Arepas

Ingredients

  • 1 cup finely ground cornmeal
  • 2 tbsp butter
  • 1 cup skim milk
  • 4 tbsp iSpice World FlavorsTM Latin Seasoning
  • 1/2 cup grated sharp cheddar
  • 1/2 cup frozen corn kernels, thawed
  • 1 jalapeno pepper, seeded & finely chopped
  • 4 green onions, finely chopped
  • 1/4 cup fresh cilantro, finely chopped
  • 3 tbsp vegetable oil for frying

Directions

Step 1

Pour milk into a small saucepan over medium heat. Heat until just hot but not boiling. Stir butter into milk.

Step 2

Combine milk, cornmeal, cheese, corn, jalapeno, iSpice World FlavorsTM Latin Seasoning, green onions and cilantro in a mixing bowl. Mix until a thick batter is formed. Cover and let stand 20 minutes.

Step 3

Divide the dough into 12 balls, greasing your hands so the dough doesn�t stick. Flatten the balls into 1/2-inch-thick disks and rest in the fridge for 10 minutes.

Step 4

Heat oil in a large frying pan over medium-high heat.

Step 5

Fry the arepas 3-5 minutes per side until golden brown.

Step 6

Carefully slice through the middle of the arepas and serve warm with a filling of vegetables, black beans, sour cream or just butter.
