Sundried Tomato Stuffed Chicken
Ingredients

2 (5 oz) chicken breasts, skinless & boneless

1/2 cup sun dried tomatoes in oil, drained & cut into strips

4 slices light mozzarella cheese

1 cup baby spinach
-
4 large leaves fresh basil
-
1 tbsp extra virgin olive oil

3 tbsp iSpice World FlavorsTM Mediterranean Seasoning
Directions
Step 1
Cut a pocket into each chicken breast, through the thickest side, being careful not to cut all the way through.
Step 2
Toss chicken with olive oil and iSpice World FlavorsTM Mediterranean Seasoning in a bowl until completely coated.
Step 3
Layer tomatoes, mozzarella, spinach and basil in both chicken breasts and press down firmly to close. Seal with toothpicks at the seam.
Step 4
Preheat oven to 400 degrees.
Step 5
Lay chicken in a non-stick baking dish. Bake chicken for 20 minutes uncovered.
