Sweet Potato Casserole

Sweet Potato Casserole

Ingredients

  • 3-4 medium sweet potatoes
  • 1/2 cup of milk
  • 1/4 cup of unsalted butter, melted
  • 1/2 cup of brown sugar
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of ground cinnamon
  • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon of salt
  • 2 eggs, beaten
  • Topping:
  • 1/2 cup of brown sugar
  • 1/2 cup of all-purpose flour
  • 1/4 cup of unsalted butter, softened
  • 1 cup of chopped pecans

Directions

Step 1

Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.

Step 2

Peel the sweet potatoes and cut them into chunks. Place them in a large pot and cover with water. Bring the water to a boil over high heat, then reduce the heat to medium and let the sweet potatoes simmer until they are fork-tender, about 20-25 minutes.

Step 3

Drain the sweet potatoes and mash them in a large bowl. Add the milk, melted butter, brown sugar, vanilla extract, cinnamon, nutmeg, salt, and beaten eggs. Stir until well combined.

Step 4

Pour the sweet potato mixture into the prepared baking dish and spread it evenly.

Step 5

In a separate bowl, mix together the brown sugar, flour, softened butter, and chopped pecans. Sprinkle the topping over the sweet potato mixture.

Step 6

Bake the sweet potato casserole in the preheated oven for 25-30 minutes, or until the topping is golden brown and the filling is set.

Step 7

Let the casserole cool for a few minutes before serving. Enjoy your delicious and comforting sweet potato casserole!
