Annatto Rice

Annatto Rice

Ingredients

  • 2 cups long-grain white rice
  • 2 tablespoons annatto oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 3 1/2 cups water or chicken broth
  • 1 teaspoon salt

Directions

Step 1

Rinse the rice in cold water and drain it well.

Step 2

Heat the annatto oil in a large saucepan over medium heat.

Step 3

Add the onion and garlic to the oil and sauté until the onion is soft and translucent.

Step 4

Add the rice to the saucepan and stir to coat it with the oil.

Step 5

Add the water or chicken broth and salt to the saucepan and bring the mixture to a boil.

Step 6

Reduce the heat to low, cover the saucepan with a tight-fitting lid, and simmer the rice for 18-20 minutes, or until all the liquid is absorbed and the rice is tender.

Step 7

Remove the saucepan from the heat and let it sit for 5-10 minutes to allow the rice to steam and fluff up.

Step 8

Fluff the rice with a fork and serve it hot as a side dish with your favorite main course.
