Mushroom and Tofu Scramble

Ingredients

  • 1 tsp canola oil
  • 2 cup white button mushrooms, roughly chopped
  • 1 16 oz package firm tofu, chopped
  • 2 tbsp reduced-sodium soy sauce
  • 3 cups baby spinach
  • 1 tbsp iSpice WellnessTM Vegetable Seasoning*
  • 2 green onions, finely chopped

Directions

Step 1

Heat oil in a medium frying pan over high heat.

Step 2

Pour chopped mushrooms into hot pan and stir-fry until mushrooms are golden brown.

Step 3

Add chopped tofu to mushrooms and cook over high heat for 5 minutes.

Step 4

Pour soy sauce into pan and stir to combine.

Step 5

Stir in baby spinach and iSpice WellnessTM Vegetable Seasoning,* cook until spinach is wilted.

Step 6

Serve hot sprinkled with green onions.
