Roasted Beet Hummus

Roasted Beet Hummus

Ingredients

  • 1 red beet
  • 1 (15 oz) can chickpeas, rinsed & drained
  • juice & zest of 1 large lemon
  • 3 tbsp tahini sesame paste
  • 1/4 cup water
  • 2 tbsp iSpice World FlavorsTM Middle Eastern Seasoning
  • 1/4 cup extra virgin olive oil
  • 2 tbsp roasted pine nuts, roughly chopped

Directions

Step 1

Preheat oven to 400 degrees Fahrenheit. Wrap beet in aluminum foil and bake for 45 minutes until fork tender. Let cool, peel and cut into chunks.

Step 2

Put beet, chickpeas, lemon zest & juice, tahini paste, water & iSpice World FlavorsTM Middle Eastern Seasoning into the bowl of a food processor and puree until very smooth.

Step 3

Slowly drizzle in olive oil with food processor still running until it is all incorporated.
