Spring Salad with Peas and Mint
Ingredients

1 cup frozen peas

2 cups sugar snap peas, trimmed

2 cups snow peas, trimmed & thinly sliced

2 cups arugula
-
2 cups mint leaves
-
1 cup low-fat ricotta cheese
-
1 small cucumber, small dice
-
1 tbsp iSpice WellnessTM Salad Seasoning*

2 tbsp fresh lemon juice & zest
-
1 tsp honey
-
6 tbsp extra virgin olive oil
Directions
Step 1
Fill a small pot with salted water and bring to the boil.
Step 2
Cook peas for 3 minutes, and then add sugar snap peas.
Step 3
Drain and immediately plunge peas into ice water to stop cooking.
Step 4
In the bottom of a salad bowl, whisk together the ingredients for the vinaigrette until well blended.
Step 5
Gently toss the peas, arugula, mint, cucumber and iSpice WellnessTM Salad Seasoning* with the dressing.
Step 6
Dot the salad with little pieces of ricotta cheese and serve.
